Chef Nicolas Adamopulos delivers sophisticated modern cuisine that bears the stamp of his personality. Organics and locally sourced, the ingredients are often used in their entirety (honey from pollack bones; tomato skin tart base etc). The cooking is precise and the preparations skilful.
