I as the customer was corrected! The chef came out and said it’s not black angus though that’s the only steak in their menu. texture is like flatiron steak. I can hardly slice it, let alone eat it and chew it. I stand corrected!!!
Service takes tooooo long. 30 minutes and the food hasn’t arrived yet. Coffee took toooo long. I already walked around the ramparts of the fortress and the coffee is still being harvested from the mountains of Brazil probably.
I know why — the chef is looking at his phone while on the job.

Pretty much as expected, solid, well prepared and presented, and delicious. Given how busy the place was the staff were great, attentive when needed and not over intrusive. The house white was a little sweeter than I prefer, but hey, still very drinkable.

Delicious! Highly recommend the duck with orange sauce and apples. One of the tastiest single dishes I have had in France! Just wonderful. Also love their house made Hypocras. Worth the try! Would love to be back. Five stars.

Steak undercooked having been asked for my personal preference, no pepper sauce as per menu description. Requested sauce and was told no. Really really disappointing meal.

Both the Terrine de foie gras and the salad was nice and came in bigger portions than expected. The Magret de canard was a re-heated disappointment, which the waiter confirmed.

Up the stairs, you'll find the pared-back dining area leading onto a courtyard terrace for dining in fine weather. On the menu, traditional and modern go hand in hand: 64-degree egg, truffle and button mushrooms; cassoulet with Castelnaudary beans and duck confit; pavlova with seasonal fruit and vanilla mascarpone cream.

The fortified Cité Médiévale is part of the time-honoured heritage of Carcassonne and its region… and the same could almost be said of Franck Putelat. In his place at the foot of the ramparts of the medieval town, this native of the Jura, who has made the Aude département his home, cooks the produce from his large (one hectare) vegetable garden, in line with his culinary concept of "classic-fiction". This translates into a clever rendering of the old gourmet hits, which the chef revisits according to what inspires him on that day. Three examples that have become iconic are his parmentier with sea fig, cassoulet with pigeon supreme and pigeon leg sausage, and bouillabaisse with duck foie gras. Appetising visuals, flavour and finesse, to be savoured in a lively atmosphere, in the company of a very diverse clientele. Pastry chef Alexis Pocinho crafts a particularly balanced selection of sweets. There are seven rooms available for overnight guests.
