There is no shortage of Japanese chefs mad about French food, but here is a French chef who is crazy about Japanese cuisine, which he showcases beautifully in his tiny restaurant in historic Annecy. His freshly-sourced, vibrant dishes hit the spot every time: gyozas of smoked eel and saba (mackerel in Japanese); koshihikari rice, giant prawns and curry… All of which in line with a sustainable agriculture and fishing ethos.
