I did not quite understood why this place has a michelin plate. It is a bistro with extremely high prices for the food they offer.
Presentation is bad - one dessert looked like it came from supermarket. It also did not taste that good
The meat and fish were mediocre - too basic for 30+ eur price.
This is the main complaint - if the price was 30 eur per person for at least 2 plats - it was serviceable. For 60 eur per person with 1 glass of wine - you better get better!
It was hot inside and no air conditioning was on. The waiter was kind and really happy to help but was really hard to catch.

Chose this restaurant from the Michelin recommended list for Cognac. The restaurant was a short walk from the hotel. We had an early reservation and we were given our choice of tables upon arrival. Upon seating, a board with warm gougeres was served. The menu is one page and features a variety of things to share and main course plates. We shared the fish tartare which was similar to ceviche but came with a delicious creamy paste. No cocktail menu, but you can order pretty much anything and they will make it. I had a delicious gin and tonic. With our main course we requested wine pairing and each plate came with its own wine. There were 3 choices for dessert but we considered our choice a miss (peach and brie) - flavors didn't work for either of us. All in all a delicious meal otherwise.

There were good and not so good things.
Let’s start with the good:
The atmosphere and deco is very nice. Staff is welcoming and kind. Some of the food we tried were tasty and not very ordinary.
Not so good:
The chairs at the terrace are metal without cushions so in a slow dining place, it makes painful to sit for a long period of time. My son chose lamb chops and he asked well done. Finally the meat was rare and very hard. Since they didn’t ask us if we were happy with the food we didn’t give this feedback, not to make a fuss. The dessert we chose was the worst part. It was a raspberry red pepper tartare, so sounded very interesting and experimental. It was experimental but not tasty at all, two random ingredients put together to experiment.
And even though we said we didn’t want aperitifs, that we would have wine with our meal, they made us chose the wine before we chose our food and the glasses arrived long before our meal.
So I think this restaurant has a great potential but it really needs a good counselor. We left the place neither happy or unhappy.

A bit expensive for a lunch menu (3 courses for 34 euros) but everything was excellent! Every course was delicious! Good quality ingredients, good cooking skills and well presented! Good wine list, very good service and beautifully decorated restaurant

Came here on our last night in Cognac with high expectations to end our stay here with a great meal. Service was professional and attentive however the food quite underwhelming. Had the chefs recommendation, argentinian beef steak. Quite basic, just the meat on a plate with gravy and a breaded mashed potato log. Not well plated. Quite surprised for this calibre restaurant. Taste was so so, paid 130 euros for 2 people, with 2 glasses of wine. Disappointed.

Les Foudres
The restaurant of the Hôtel Chais Monnet is housed in the high-ceilinged space where the huge hundred-year-old barrels used for ageing cognac were kept. In the intimate-feeling dining rooms with their hushed atmosphere, no detail has been neglected, from the exquisite contemporary silverware to the crystal glasses. The cuisine is meticulously crafted in order to showcase local ingredients from the Charente terroir: free-range poultry, fish from the fish market, Île de Ré potatoes etc. The chef sets great store by plating his dishes elegantly and perfecting his concentrated sauces: the caramelised celery jus is a seamless substitute for a meat gravy.

The deliberately short menu offers tasty market-based cooking, with flights of fancy far and wide; it is made with fine ingredients prepared with care and originality. Amandine, once a dance teacher, now head of service and partner, and Antoine, alumnus of the elite Paris Institute of Political Studies but passionate about food (stints at Lucas Carton and Jadis) have joined forces to offer a delightful culinary experience.

This attractive house in the town centre is built of white stone and has a relaxed atmosphere inside. The cuisine is eclectic, with multiple influences (Asia, the Mediterranean, South America): pan-fried squid with garlic and red chilli; lamb shoulder confit with cumin, tchoutchouka (roasted pepper and tomato salad); beef tenderloin, panko with herbs and chimichurri sauce. Be sure to try the house cocktails featuring cognac.

A little way from the town centre, this fine 19C town house is now a luxury hotel. It has undergone first-class restoration work, and this has particularly benefited the restaurant's dining area, which is set in a small lounge. Chef Anthony Carballo proposes two surprise menus comprising several courses, inspired in part by the estate's vegetable garden. Tomato, basil and burrata; pollack, courgette and fish stock: a wonderful gourmet interlude!
