The pigeon dish was splendid, with perfectly cooked pink meat that was a true demonstration of culinary skill. However, the other food items were just okay.
Unfortunately, the restaurant's hygiene was a significant issue. The place was full of flies—on the glass, the bread, and the cheese. I'm not sure if this level of cleanliness is acceptable for a restaurant that boasts a ⭐️. Additionally, the wine glasses had significant dirt and stains, which is simply unacceptable.
We opened two bottles of wine:
- **Domaine Roulot Meursault 2020**
- **Domaine Jacques-Frédéric Mugnier - Château de Chambolle-Musigny**
It was quite disconcerting to see the staff pouring themselves half a glass of our wine under the guise of "tasting the condition" for the customer. This practice is definitely not appropriate.
Overall, while the pigeon was excellent, the hygiene issues, dirty wine glasses, and the staff's behavior with the wine left much to be desired.

One of the most exceptional Michelin experiences I’ve had - and I’ve had many. Food and flavours was everything you’d expect from a one-star and perhaps even more. The attention to detail in some of the dishes, particularly the sauces and accompaniments was incredible. One dish was better than the next… a true achievement and worth a special trip to eat here but give yourself plenty of time to explore the grounds too, which were spectacular. I’d expect Michelin will be sending them a second star soon…

There are no words to describe the experience. Period.
I’ve read some of the comments, they are aloof and didn’t seem to appreciate the food, only the place.
You have to taste it for yourself, it is unique, clasic dishes with a unforseen twist, a sensorial excursion better understood first hand.

One of the best meals in Burgundy!
Excellent restaurant with a great choice of wine in a stunning setting. Delicious food and impeccable service. Their cheeseboard is epic! The restaurant has elegant decor and ambience. Highly recommended.

Impeccable food, service, and overall experience. From start to finish, the staff was incredibly welcoming and helpful, as well as being attentive and detail-oriented. We had the 5 course Gourmand menu and it was a fantastic experience.
The foie gras entrée was beautifully presented and really intricate. The blackcurrant jelly around the foie gras was unique and well made. The first main of trout was cooked to perfection and had complex flavours from the sauce and seasoning. The second main of pigeon was tender and rich. All elements of each dish are deliberate and balanced.
Wonderful experience all in all. Deserving of the Michelin star and perhaps even another one.

La Table du Square
After a top-to-toe makeover, this bistro on the main boulevard sports a lovely contemporary decor complete with wooden floors, black and white striped walls and photos of the stars of French cinema enjoying good food. Cooking has no secrets for chef Romain Escoffier (well, he does share the name of a legend of French cuisine!): he chooses local produce (such as succulent lamb reared at the Ferme de Clavisy) with which to craft his market-fresh cuisine. The à la carte menu and set menu (derived from the à la carte menu) are updated every fortnight. Given the location in Beaune, you won't be surprised to learn that the wine list boasts some 800 labels – so drink up!

Soul Kitchen
“Let me sleep all night in your soul kitchen” hauntingly sang Jim Morrison on the Doors’ first album and you can always ask Mathieu Guennal, the owner-chef who works alone in this dinky (12 seats only) downtown eatery in Beaune, if he’s willing to put you up! Mathieu works with local producers (chalked up on the blackboard) and cheerfully dishes up soul-warming, heartfelt nosh, as good as it is unfussy (such as slow-cooked pork belly, a ginger reduction and gratin of helianthus) in two gloriously priced €30 menus (one of which changes weekly). Take a seat and soak up the friendly, casual vibe of this small eatery with wooden floors and a raftered ceiling in the company of a generous chef.

L'Expression
This city-centre establishment serves top-drawer ingredients, many of which are to share (whole fish from the market, rib of Galice beef, butterflied, plump fattened Bresse Miéral chicken), in two trendily appointed dining rooms (open kitchen, glazed wine cellar and high tables). The food is cooked in a wood-fired oven. Extroverted, friendly atmosphere. Beautifully curated wine list.

Le Carmin
On Place Carnot, not far from the Hôtel-Dieu, this restaurant with a modern façade occupies the ground floor of a picturesque old house. After stints with Robuchon and Ducasse, chef Christophe Quéant crafts modern, seasonal cuisine based on traditional textbook foundations. His top-quality ingredients are transformed into spot-on, straightforward dishes, blessedly free of fancy frills. The contemporary-style dining room, which sports a beige colour scheme and exposed stonework, is the perfect foil for delicious dishes such as caramelised quail breasts and legs, white asparagus and baby carrots and the hot Grand Marnier soufflé – to die for!

Le Bénaton
In the heart of Burgundy, Beaune is known the world over for its annual charity wine auction held in the iconic Hospices edifice, famous for its glazed tile roof. A steadfast champion of fine French food and wine, Japanese chef Keishi Sugimura, couldn’t have found a town that suits him better. Trained in Japan, the chef excels in the art of the porkpie, which earned him the title of vice world champion in 2013. Flavoursome seasonal dishes sprinkled with creative touches.

Bistro de l'Hôtel
The elegant, chic bistro - style interior is the setting for cuisine that honours tradition and first - rate ingredients. The house speciality is roasted Bresse chicken. As for the wine list, it is quite simply impressive.

Le Relais de Saulx
This characterful establishment (1673) in the town centre, not far from the Hospices de Beaune, is in the capable hands of Charles Danet (previously at the helm of Le Timbre in Paris). He has had no trouble quickly making himself at home in Burgundy! His signature style is unmistakable in the wholesome market-fresh cuisine, which he describes as "artisanal seasonal" cooking.

La Superb
Located in the heart of the old town, this contemporary "dining bar" serves market-fresh dishes that are in tune with the seasons. Take a seat at the counter for views of the chef cooking fine mature meats or his tuna Rossini a la plancha, or alternatively in the small dining room with stone walls and glassed-in wine cellar, and prepare to enjoy tasty, no-frills cuisine. Bargain-price set menu at lunchtime!
