One of the best restaurants I have been to in Toulouse. Service was great even more because they spoke Spanish. Customers did not select the entré instead they brought it to you as a surprise. For us, the entré was a nice basket with vegetables, liver & blood sausages, and various dips.
For the main dish, I ordered a cassoulet. the duck was tender, and the sausage was tasteful and juicy but it didn't overpower the duck.
I will definitively return the next time a visit Toulouse.

We got the table for two tucked away at the door.. fun.. server a friendly polyglot who enjoyed speaking Spanish with me.
A pretty place in a rustic style serving excellent cassoulet and what looked like good grilled steaks …sadly the grilled duck breast did not impress… chewy and badly needing a sauce to perk it up ( the polenta side dish was delicious though and went beautifully with the fava beans in the cassoulet!)….but the very generous free starters , good wine at a decent price and the cassoulet made up for it! Busy so reserve…

Fantastic. Great setting, great ambience, and friendly staff. Very accommodating to our poor French! The starter was fun and very fresh. The cassoulet was made with fava beans, which was a nice twist. The pigs feet were rich and very well prepared. Great dinner all round.

5 stars are too few for this place in every regard. The quality of the ingredients is outstanding, everything is fresh, beautifully presented and perfectly cooked. The waiter and waitress explained the menu in spanish and English so that we had the best experience! Also, I was surprised by how welcoming this place was. I loved the fact that it wasn’t pretentious.
We had the Gateau de Canard and the Magre de Canard with the Strawberry Melva. I thought duck was not my thing until today! I wish we could come back… ❤️

Table at 10pm. At 10.20pm they finally give us a menu. At 10.30pm they come to take our order. At 11.15pm we start eating our mains. This kind of waiting time, late at night, is unacceptable irrespective of how good the food is (which it was indeed good, the cassoulet).

The dishes are enhanced with invigorating and refreshing seasonings – take the sea bass cooked skin on and served with a green olive sorbet and grated bottarga for saltiness.

At this small restaurant in an old building with exposed brick and pebble interior walls, diners have two options: excellent value for money at lunchtime or more elaborate cuisine in the evening with the single set menu. Hortus is Latin for "garden" and indeed plants are at the heart of the cuisine of chef Clément Lessoud (former second-in-command to Ludovic Turac at the restaurant Une Table au Sud in Marseille). This creative, healthy and eco-minded cooking (ie made using organic produce and limited meat) is an ode to the South of France, from the Mediterranean to the Atlantic. His signature style is a predilection for herbaceous notes and bitterness, as found in green asparagus, bottarga, tangy pickled red onions, creamy carrot purée with bitter orange and bergamot cream, or roast turbot with artichoke.

Uplifting!
