La Table du Square
After a top-to-toe makeover, this bistro on the main boulevard sports a lovely contemporary decor complete with wooden floors, black and white striped walls and photos of the stars of French cinema enjoying good food. Cooking has no secrets for chef Romain Escoffier (well, he does share the name of a legend of French cuisine!): he chooses local produce (such as succulent lamb reared at the Ferme de Clavisy) with which to craft his market-fresh cuisine. The à la carte menu and set menu (derived from the à la carte menu) are updated every fortnight. Given the location in Beaune, you won't be surprised to learn that the wine list boasts some 800 labels – so drink up!

Soul Kitchen
“Let me sleep all night in your soul kitchen” hauntingly sang Jim Morrison on the Doors’ first album and you can always ask Mathieu Guennal, the owner-chef who works alone in this dinky (12 seats only) downtown eatery in Beaune, if he’s willing to put you up! Mathieu works with local producers (chalked up on the blackboard) and cheerfully dishes up soul-warming, heartfelt nosh, as good as it is unfussy (such as slow-cooked pork belly, a ginger reduction and gratin of helianthus) in two gloriously priced €30 menus (one of which changes weekly). Take a seat and soak up the friendly, casual vibe of this small eatery with wooden floors and a raftered ceiling in the company of a generous chef.

L'Expression
This city-centre establishment serves top-drawer ingredients, many of which are to share (whole fish from the market, rib of Galice beef, butterflied, plump fattened Bresse Miéral chicken), in two trendily appointed dining rooms (open kitchen, glazed wine cellar and high tables). The food is cooked in a wood-fired oven. Extroverted, friendly atmosphere. Beautifully curated wine list.

Le Carmin
On Place Carnot, not far from the Hôtel-Dieu, this restaurant with a modern façade occupies the ground floor of a picturesque old house. After stints with Robuchon and Ducasse, chef Christophe Quéant crafts modern, seasonal cuisine based on traditional textbook foundations. His top-quality ingredients are transformed into spot-on, straightforward dishes, blessedly free of fancy frills. The contemporary-style dining room, which sports a beige colour scheme and exposed stonework, is the perfect foil for delicious dishes such as caramelised quail breasts and legs, white asparagus and baby carrots and the hot Grand Marnier soufflé – to die for!

Le Bénaton
In the heart of Burgundy, Beaune is known the world over for its annual charity wine auction held in the iconic Hospices edifice, famous for its glazed tile roof. A steadfast champion of fine French food and wine, Japanese chef Keishi Sugimura, couldn’t have found a town that suits him better. Trained in Japan, the chef excels in the art of the porkpie, which earned him the title of vice world champion in 2013. Flavoursome seasonal dishes sprinkled with creative touches.

This characterful establishment (1673) in the town centre, not far from the Hospices de Beaune, is in the capable hands of Charles Danet (previously at the helm of Le Timbre in Paris). He has had no trouble quickly making himself at home in Burgundy! His signature style is unmistakable in the wholesome market-fresh cuisine, which he describes as "artisanal seasonal" cooking.

Located in the heart of the old town, this contemporary "dining bar" serves market-fresh dishes that are in tune with the seasons. Take a seat at the counter for views of the chef cooking fine mature meats or his tuna Rossini a la plancha, or alternatively in the small dining room with stone walls and glassed-in wine cellar, and prepare to enjoy tasty, no-frills cuisine. In a long, narrow interior, where black leatherette benches meet exposed stone, Stéphane Léger, former Michelin-starred chef, regales us with his Burgundian cuisine and traditional dishes with a Mediterranean edge. Poached eggs in red wine sauce, braised ox cheek, ham and parsley terrine, snails, but also roast langoustine tails, baby potatoes and girolles mushrooms.

Wine takes pride of place in this friendly bistro with an outstanding selection of some 800 different bottles. The chef certainly knows his way around them, and is equally at ease in the kitchen. Diners delight in his homemade jellied ham with parsley, veal chop in jus and crème caramel. The dishes will have you coming back for more.

A refined winegrower's manor house, abounding in character and style, surrounded by a lush garden where a handful of tables are laid out in summer… The perfect setting in which to sample Jordan Billan's cuisine, which is very much rooted in Burgundy (his suppliers are featured on the menu). His taste for tradition – matured fillet of beef, bone marrow, chanterelle, a Pinot Noir reduction – does not prevent him from dreaming up more creative dishes, such as a delicious ikejime Morteau trout, artisanal tofu (from Volnay) and Burgundy sake – an appetising blend of food cultures. Guests will also appreciate the timeless elegance of the charming, classically styled guestrooms.

The food here is stamped with the Bernard Loiseau hallmark and served in a "chic bistro" atmosphere (stone, wood and velvet-upholstered banquettes set the tone). The menu includes classics such as eggs in a red wine sauce, pâté en croûte, Charolais ox cheek and Saône catfish, and beautifully fresh Burgundy veal tartare with smoked eel. There is a good wine list with around 50 options.

Proudly flying the fine dining flag, the chef, who trained in prestigious establishments (La Côte Saint-Jacques, Lameloise and La Pyramide), crafts a fresh, colourful score that is often jazzed up with citrus fruits. The result is often inspired, illustrated by langoustine and tourteau crab, leeks, buckwheat, watercress and smoked yoghurt or scallops, Belgian endive, salsify and clementines… Meals are served in a bright, contemporary interior.

Garum
The chef has turned his Jardin des Remparts into a “living table”. This fashionable, classy bistro uses premium ingredients in a menu ranging from pre-dinner snacks to share with friends (Gillardeau oysters, charcuterie and French fries) to a selection of mouth-watering, well-crafted seasonal dishes. The bistro’s namesake (garum) is a fermented sauce, popular with the Romans, that Christophe Bocquillon uses to season beef tartare, in particular.

L'Alentour
This quintessentially cosmopolitan, downtown eatery of Beaune is the joint brainchild of Tatenda Mhende, in charge of the dining room, who hails from Zimbabwe, chef Natasha Watson, who is from Calgary (Canada) and Marc Marchetti, also a chef, who is a Beaujolais lad. This alchemy of buddies has sparked a particularly appetising culinary offering that is depicted by a concise menu of hearty dishes packed with punchy flavours, to be shared (or not!): barbecued oxheart tomatoes, smoked tomato water and mozzarella; crunchy fritters of mushrooms with marrow, chardonnay-flavoured vinegar gel; pork belly, patty pan squash and courgettes.
